Kurban Bayramı'ndan sonra gelen ay, &quot;aşure ayı&quot; olarak anılır. Her yıl Muharrem Ayı'nın 10. g&amp;uuml;n&amp;uuml; pişirilmeye başlanan aşure, T&amp;uuml;rk mutfağının en eski ve geleneksel tatlılarındandır. Aşure ayında her mutfakta aşure pişer. Hatta bir inanışa g&amp;ouml;re &amp;ccedil;ok yoksul olan vatandaşların mutfağında bile en az bir cezve aşure pişirilmesi gerektiğine inanılır. Ayrıca bir diğer gelenek ise i&amp;ccedil;ine en az 7 farklı madde konulan aşurenin en az 7 kişiye dağıtılması gerektiği inanışıdır. G&amp;uuml;n&amp;uuml;m&amp;uuml;zde de bu inanış halen bir&amp;ccedil;ok kesimde uygulanır. Komşulara ve yakınlara dağıtmak gelenekten sayıldığından dolayı da bolca pişirilir. Konu komşunun yaptığı bu aşure alışverişi elbette kendi i&amp;ccedil;inde bir rekabeti de getirir. &amp;ldquo;Ustalık&amp;rdquo; mertebesine y&amp;uuml;kselmek i&amp;ccedil;in aşure bol malzemeli olmalı, rengi a&amp;ccedil;ık olmalıdır. Ama en zoru aşurenin kıvamını tutturmaktır. Ne koyu ne de sulu aşure hoş karşılanmaz. &lt;br /&gt;&lt;br /&gt;Aşurenin ortaya &amp;ccedil;ıkışı hakkında ş&amp;ouml;yle bir rivayet vardır: &quot;Nuhun gemisi tufan dinip, Ağrı Dağı'na oturduğunda gemidekiler Allah'a ş&amp;uuml;kretmek i&amp;ccedil;in, bir kutlama yapmak isterler. Fakat geminin yiyecek ambarları neredeyse boşalmak &amp;uuml;zeredir. Bunun &amp;uuml;zerine yiyecek olarak ne bulurlarsa hepsini biraraya getirip bir &amp;ccedil;orba pişirirler ve aşure ortaya &amp;ccedil;ıkar&quot;.
